Sweet Potato & Bacon Soup
Looking for a comforting soup for those cold nights or rainy days? Well this sweet potato soup recipe renders just that. It doesn't have a ton of ingredients like many soups do so you won't have to spend a small fortune in the produce department and it's very simple to make.
Warm and inviting... this soup is the edible equivalent of curling up with a good book, wrapped in your favorite blanket.

Sweet Potatoes
Green Onions
Ingredients
- 1 1/2 Pounds Sweet Potatoes
- 1 Pound Bacon
- 2 Medium Yellow Onions, Diced
- 3 Green Onions, Sliced
- 2 Cloves of Garlic, Minced
- 2 Bay Leaves
- 32 Ounces Chicken Broth
- 1 Teaspoon Nutmeg
- Olive Oil
- Salt & Pepper (to taste)
- Sour Cream (optional)
- Milk (optional)

- Preheat oven to 350 degrees. Slice sweet potatoes down the center, long ways. Lightly coat the halves in olive oil, then lay in a pan, flat side down. Bake for about an hour or until the centers are soft.
- Cook bacon until very crispy and save the drippings. The best way would be to cook it on a broiler pan so the oils fall through the grates into the pan below. Crumble bacon up after it cools and set aside.
- Use the bacon drippings to sauté the diced yellow onions in your saucepan. After 5 minutes add the garlic and continue to sauté another minute.
- Scoop out the insides of the sweet potatoes, discarding their skins. Put potato flesh in the saucepan with the onion and garlic mixture, you may need to press down on them a bit with a potato masher or fork. Add in the chicken broth, bay leaves, nutmeg and more of the bacon drippings to really get the flavor through the soup. Bring to a boil, then simmer uncovered about 20 minutes.
- Get your toppings ready while the soup simmers. Slice up your green onion and crumble your bacon if you haven't yet. To make the sour cream sauce, simply mix in some milk with your sour cream. This will thin out its texture so it's more sauce-like. Once your soup is ready, load it up like you would a baked potato. Add as much bacon, green onion, salt, pepper and sour cream sauce as you'd like.
Additional Tips
Keep in mind, the bacon and the bacon drippings are adding quite a bit of salt to the soup so be sure to perform several taste tests throughout the steps before adding any more salt to it.
Also, if the soup is too thick for your taste you could thin it out with more chicken broth or even run it through a food processor or blender until it has reached your desired consistency.
